Not a sticky but has the full sweet flavour of a fully ripe Mango - not sugar but fruit flavour. Technically a medium-dry wine with less than a quarter of the residual sugar of a Dessert wine. A perfect affinity with all the cheeses, and matches all Shellfish - ask any Chef about Mangos and Prawns. The perfect social wine. |
Passionfruit Table Wine of Shannonvale Wine
Passionfruit - Medium-flavour and dryDry - Medium flavour with a touch of the Passionfruit acid. Similar in style to the Sauvignon Blanc - dry but lighter in acid, complex in flavours which of course includes the Passionfruit flavour. Is now developing “ toasty ” characters and should cellar for up to 5 years. Perfect with stronger fish including Shellfish but also the deep sea fish like Tuna with its Omega Oils. Think outside the square, try it with very sweet desserts like Sticky Date Pudding - it cleans the palate between spoons full of glug. Fantastic with Pavlova and strong cheeses. Very similar in food range to the Pineapple but with its higher acid is excellent with foods prepared with fats and oils. |
Jaboticaba Table Wine of Shannonvale Wine
Jaboticaba - Medium Dry RedThe medium reds are the most popular style of reds in the tropics because they can be chilled. On the first sip this Jaboticaba medium red wine has the typical touch of Tannins and Acids like most reds, but on the second sip has lots of interesting fruit flavours typical of the tropical fruits and these include Cherry, Blackcurrent, Pepper, Cinnamon, and Cloves. It has been described like a Merlot but with lots of "grip" and is full of flavour. An easy drinking dry medium-red for your red meats - steaks, roasts, Bar B Ques, Pizzas, Spaghetti Bolognese, Lasagne, Goose, Duck, Curries, Lamb, Turkey, Pork. It has just a touch of acid which adds to the complexity. A great steak wine. If you are into red wines you should try it, you'll love it. |

Ginger - Medium-flavour, medium dry/sweetIf you love Ginger you will love this table wine. The wine we make for all spicy foods. One of our favourites. A medium flavour, neither sweet nor dry. This ginger wine is made for all spicy food (meaning flavour as well as chili). This is our first choice wine for foods like Thai, Chinese, Mexican, Spanish and many Indian foods, Japanese. We have modified this Ginger wine over the past 5 years to best suit the average palate and this is it folks. It has the typical aroma of ginger and still has a bit of a bite at the back palate. If you like ginger you will find that it is an excellent casual drinking wine. |

Once fermented the Port develops flavours of Chocolate, Licorice, Dates, Prunes, Sarsaparilla, Golden Syrup, Aniseed, Raisins, Figs, Vanilla, Caramel, Cinnamon, Christmas Pudding and others.
