I am continuing to educate our readers on Russian cuisine, its diversity and its unique dishes.
Russian Apple Pie
Russian apple pie is a traditional autumn bakery. The key secret of a cooking success is a special apple sort, called Antonovka. They are sour and give a special taste to the sweet dough.Ingredients: 3 ea big eggs 3 ea average sour apples 1 c sugar 1 c flour 1 ts baking soda
Method: Peel the apples and slice into thin pieces. Mix eggs, soda and sugar in the mixer. Add flour gradually. The dough must be liquid as sour cream. Pour a little vegetable oil in the pan. Put all apples (use different design) on the bottom. Pour the dough in to the pan evenly. Heat the oven and bake the pie during 20-30 minutes. When the pie is ready, put the pan on the wet napkin for 5 minutes. It helps to detach the pie from the pan. The apples must be on the top of the pie. Apple pie is served, of course, with my favourite beverage - tea.
Russian Mimosa salad
For years, Mimosa salad is considered as one of the musts on the table when there is a big family event or a New Year celebration. Even though the salad is made with mayonnaise, the taste is very tender and light. You can try with different canned fish in oil.Ingredients: 1 can salmon in oil 4 ea boiled eggs 2-3 ea boiled carrots 3 ea boiled potatoes 1 ea onion 1 c mayonnaise
Method: For this salad, it is better to use a deep glass bowl. Put canned fish on the bottom without any liquid and mash with a fork. Spread mayonnaise on it. Then top with finely grated egg whites and again mayonnaise. After that goes grated boiled carrot, mayonnaise, finely chopped onion, mayonnaise, grated boiled potatoes, mayonnaise. The top is decorated with grated yolks
Abzhorka (Food Lover Salad)
Even though, the salad does not have gourmet ingredients and is really easy to make, it is very tasty and it is just impossible to stop eating it. That is why it is called Abzhorka or Food Lover. Suggestion: for Russian salads use Real Mayo only.
Ingredients: 3 Carrots, 3 large Pickles, 1 lb Beef Sirloin, 2 large Onions, Mayonnaise (about 12 oz bottle).
Method: Boil the carrots and the sirloin. Cut the onions into rings and then make long stripes out of the rings; roast the onion stripes slitely till they soften. Cut the boiled carrots and pickles into thin stripes. Tear the boiled sirloin apart making thin stripes, as well. Mix everything, add mayonnaise, and salt the salad a bit. Use your fantasy to decorate
